06 - 1 cup shredded sharp cheddar cheese
07 - 3.5 ounces cooked bacon, chopped (optional; omit for vegetarian preparation)
08 - 2 tablespoons truffle oil
09 - 3 tablespoons chopped fresh parsley
10 - 2 tablespoons grated Parmesan cheese
11 - 2 spring onions, finely sliced

# Method:

01 - Preheat oven to 425°F. Line a large baking tray with parchment paper.
02 - In a mixing bowl, toss fries with olive oil, sea salt, and black pepper. Spread the fries evenly across the prepared tray.
03 - Bake fries for 25 minutes, turning midway, until crisp and golden brown.
04 - Remove fries from the oven and transfer to an ovenproof serving dish. Reduce oven temperature to 400°F.
05 - Evenly distribute mozzarella and cheddar cheeses over the fries. Add chopped bacon if using.
06 - Return dish to the oven and bake for 5–7 minutes, until the cheeses are melted and bubbling.
07 - Remove from oven and immediately drizzle truffle oil over the hot fries. Sprinkle with grated Parmesan, fresh parsley, and sliced spring onions.
