# Method:
01 - In a medium saucepan, combine rinsed rice, water, and salt. Bring to a boil, then cover and reduce heat to low. Simmer for 15 minutes until rice is tender and water is absorbed. Fluff with a fork and set aside.
02 - Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 2 to 3 minutes. Stir in minced garlic and cook one minute more. Add ground beef, breaking it up with a spoon, and cook until browned, roughly 5 to 7 minutes. Drain excess fat if necessary.
03 - Stir in chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Add tomato sauce and simmer for 2 to 3 minutes until the mixture thickens. Remove from heat.
04 - While the beef cooks, heat black beans and corn in a small saucepan or microwave until warmed through.
05 - Divide cooked rice evenly among four serving bowls. Top each with seasoned beef, black beans, corn, diced red bell pepper, halved cherry tomatoes, and shredded lettuce.
