I first tried avocado chocolate mousse when searching for healthier desserts to enjoy with my family. This version surprised everyone with its ultra-smooth texture and deep chocolate flavor & it&s become our go-to treat ever since.
Ingredients
- Ripe avocados: 2 large, peeled and pitted
- Dark chocolate: 100 g (3.5 oz), 70% cocoa, chopped
- Unsweetened cocoa powder: 3 tbsp
- Pure maple syrup (or honey): 4 tbsp
- Pure vanilla extract: 2 tsp
- Sea salt: Pinch
- Unsweetened almond milk (or milk of choice): 3 tbsp, more as needed
- Fresh raspberries: 125 g (1 cup)
- Dark chocolate, shaved or chopped: 1 tbsp, optional
- Fresh mint leaves: optional, for garnish
Instructions
- Melt Chocolate:
- Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler) or in the microwave, stirring until smooth. Allow to cool slightly.
- Blend Ingredients:
- In a food processor, combine avocados, melted dark chocolate, cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until completely smooth and creamy, scraping down the sides if needed.
- Adjust Consistency:
- Add almond milk, one tablespoon at a time, and blend until the mousse reaches your desired consistency.
- Taste & Adjust:
- Taste and adjust sweetness if needed by adding more maple syrup.
- Chill Mousse:
- Spoon the mousse evenly into 4 serving glasses or bowls. Cover and refrigerate for at least 1 hour.
- Add Toppings:
- Before serving, top each mousse with fresh raspberries, shaved chocolate, and mint leaves if desired.
