01 - 3 cups all-purpose flour, plus extra for dusting
02 - 1½ teaspoons baking soda
03 - 1 teaspoon fine sea salt
04 - 2 teaspoons granulated sugar

05 - 1 cup buttermilk, chilled
06 - ⅓ cup unsalted butter, cold and cubed
07 - 1 large egg, lightly beaten, for brushing

# Method:
01 - Set the oven to 400°F. Line a large baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together the flour, baking soda, salt, and sugar until well combined.
03 - Add the cold, cubed butter. Using a pastry cutter or your fingertips, rub the butter into the flour mixture until coarse crumbs form.
04 - Pour in the chilled buttermilk and gently stir with a fork only until the dough just begins to come together.
05 - Transfer the dough onto a lightly floured surface. Knead by hand for about 30 seconds, forming a soft, cohesive dough.
06 - Roll the dough into a rectangle, approximately ½ inch thick.
07 - Using a knife or pizza cutter, slice the dough into 10 strips, each about 1 inch wide. Twist each strip several times and arrange on the prepared baking sheet.
08 - Brush the tops with beaten egg and sprinkle with sesame seeds, poppy seeds, or Parmesan cheese as preferred.
09 - Place in the oven and bake for 20–22 minutes until twists are golden brown and flaky.
