# Components:
→ Dry Ingredients
01 - 2 cups all-purpose flour
02 - 1 cup almond flour
03 - 1/2 teaspoon baking powder
04 - 1/4 teaspoon fine sea salt
→ Wet Ingredients
05 - 3/4 cup unsalted butter, softened
06 - 3/4 cup granulated sugar
07 - 1 large egg
08 - 2 teaspoons pure vanilla extract
09 - 1 teaspoon grated lemon zest
→ For Decoration
10 - 1/2 cup sliced almonds
11 - 1/2 cup powdered sugar
12 - 2 tablespoons lemon juice
13 - Festive colored sugar or sprinkles
# Method:
01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt until well blended.
03 - In a large bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
04 - Add the egg, vanilla extract, and grated lemon zest to the butter mixture, then beat until the mixture is homogenous.
05 - Gradually incorporate the dry ingredients into the wet mixture, mixing only until just combined. Do not overmix.
06 - Scoop tablespoon-sized portions of dough and shape into balls. Place the balls 2 inches apart on the prepared baking sheets.
07 - Gently flatten each dough ball using your palm, then press several sliced almonds onto the surface of each cookie.
08 - Bake for 10 to 12 minutes or until edges are just turning golden. Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
09 - Combine powdered sugar and lemon juice until smooth. Drizzle glaze over cooled cookies and decorate with festive colored sugar or sprinkles as desired.
10 - Allow the glaze to set fully before serving or storing in an airtight container.
